Method Champenoise, Blanc de Blanc

Our “Chanson des Etoile” (Song of the Stars) is made from 100% Chardonnay from Clement Hills in Lodi.

This bubbly is crisp and clean. It is designated a Blanc de Blanc but it is much more of a Brut lover’s bubbly, with tiny bubbles, bright and crisp, and just the right amount of fruit and creaminess to balance the crisp acidity.

Methode Champenoise is made exactly the same way as the great champagnes of France, which means that there is a secondary fermentation in the bottle.
